It's Now The Season For White Truffles!
White truffles are among the world's most prized gourmet delicacies. The famed eighteenth century gastronome, Brillat Savarin, labelled white truffles the, 'diamond of the kitchen', they are also described by foodies today as 'white gold'.
Italian white truffles are the most sought-after of all truffles and are mostly found in limited areas of northern Italy in the region of Alba. Highly trained dogs and pigs sniff them out during their short season between mid October and December.
White Truffles are rarer, more pungent and superior in flavour than black summer truffles. They are also known to stimulate appetite and are rumoured to be an aphrodisiac - they are sure to get you in the mood for the festive season!
Head Chef Alan Marchetti has used the Italian white truffle in the following dishes now on the menu at Sartoria:
- beef carpaccio, rocket, parmesan, mustard dressing, white truffle
- white truffle risotto*
- buckwheat pizzoccheri, cabbage, leek, fontina, white truffle supplement
- scottish beef fillet 'rossini', white truffle
